The brief
What we were asked for
A reception for 620 across two lawns. One family wanted the food strictly no-onion-no-garlic; the other wanted the full spread. Both menus had to feel like the same dinner.
The challenge
Two kitchens, one service window. Everything had to land hot at 8:15pm on lawns ninety metres apart, and the satvik line needed its own utensils, its own chafing dishes and its own staff from prep through to service.
