What we were asked for
Lunch for 340 in a 45-minute window between sessions, with a hard stop.
The challenge
A conference lunch fails if the queue is longer than the break. We ran four parallel buffet lines instead of one long one, put the chaat counters at the far end to spread the crowd, and cleared 340 guests in 31 minutes.
